Rocket Fuel for Runners
Ingredients
1/4 medium green cabbage
1/2 jicama
1 large Fuji apple
1/4 cup pineapple juice
1/2 cup veganaise or raw greek yogurt
1 to 2 tsp raw honey, to taste
1 or 2 squirts of hot sauce, to taste
pinch of salt
1/3 cup sunflower seeds, pine nuts, or pistachios
Instructions
In salad bowl mix together pineapple juice, veganaise or yogurt, honey, hot sauce, and a pinch of salt. Use a 1/4 inch julienne slicer on the mandoline to slice cabbage, jicama, and apple to uniform width and then add sliced ingredients to salad bowl with dressing and toss salad to coat well. Top salad with nuts of choice and enjoy!
