Here is a recipe that I modified from the internet:
8 cups prepared kale, de-stemmed and sliced super thin
3/4 teaspoon sea salt
4 tbsp honey
4 tbsp lemon juice (one whole lemon)
1 tsp fresh grated ginger
¼ tsp black or red pepper
1 apple, chopped small
6 radishes, sliced thin
1 avocado, chopped small
4 tbsp sunflower seeds
Rinse off the kale, remove stems including through the leaf, leaving only the dark part of the leaf. Sprinkle on 3/4 teaspoon of the salt, the honey and lemon juice and begin to squeeze the kale vigorously with your hands so that the kale softens and moisture begins to sweat out. Taste it to see if you need any more salt. Massage the kale until it is moist and tender.
Add the ginger, the apple chunks, radish, avocado, and sunflower seeds. Toss together with pepper to taste and serve.
