Wonderful Nut Candy

Today I am enjoying a "candy" treat made with nuts. It is something I only eat occasionally because it is so rich...but so delicious!
My husband and I use organic raw almonds, soaked, to make "milk" for smoothies or other uses. Soak almonds overnight, drain and rinse. Then put 1 cup soaked almonds in the blender with 4 cups water and 2 dates, a shake of salt, and a little vanilla (all but the almonds and water are optional!). Blend until the nuts are finely ground. Pour milk through a clean nylon stocking or cheesecloth and squeeze out. There you have a quart of wonderfully fresh almond milk. Then I save the pulp for treats.
I add 1 cup almond pulp and 1 cup fresh walnuts in my food processor. I then add 1/2 cup or so of fresh dates (I'm blessed to live within a few miles of a date farm and we enjoy organic, fresh dates from the source). A dash of "Real Salt", 1/4 tsp. of organic vanilla extract or ground fresh vanilla bean, and I grind into a doughy ball with the food processor. I take 1 Tbsp. of this mixture at a time and roll into balls. These balls must be frozen or refrigerated to stay fresh. My 13-year old son will choose this treat over "store candy" every time. Another yummy addition would be about 1/4 cup carob powder. My husband really likes it that way. He also likes to add a drop or two of peppermint oil with the carob.
