Most salsa today is cooked and not nearly as nutritious as this bold and enjoyable fresh salsa. Enjoy!

1/4 cup fresh cilantro
1 medium onion
1 Tbsp fresh lemon juice
6 ripe roma tomatoes
1/2 serrano chili pepper
1 tsp apple cider vinegar
1 tsp sea salt
5 to 6 baby carrots
1 Tbsp pure maple syrup (optional)

Instructions: Place ingredients in blender and use variable speed number one and increase slowly to speed four or five; run 10 to 20 seconds until ingredients are chopped to desired salsa consistency.

This is one of our favorite recipes from Original Fast Foods. We almost ALWAYS have it in the fridge.
