Kowabunga! I just ate a surprisingly appetizing salad made of brussel sprouts! You know, those nasty, bitter bombs that make everyone groan when mentioned? Well, here's a very delicious way to serve them:
Cut away brown base and discard dark, discolored outer leaves. Place in microwave-safe dish with a few tablespoons of water and microwave on high until brussel sprouts are bright green and barely tender, about 5 minutes. Immerse in cold water to halt cooking process and chill. Cut crosswise into very thin slices. Toss to separate leaves. The end result will look a little like shredded cabbage used for cole slaw. Now add your favorite raw vegetables (grated carrot, chopped bell peppers, purple onion, snap peas, etc.) Toss with your favorite dressing. Use an Italian vinaigrette for a Caesar-type salad, a creamy dressing to make it like cole slaw, a honey mustard if you want it like spinach salad, a sweet dressing to make it fruity... It's very versatile, and not bitter at all!
