Broccoli Salad
In the mood to expand your palette for another delightful raw salad? Was hankering for something new today and saw that we had some very nice broccoli on hand. This just sort of fell together and both Colleen and I enjoyed it very much. Hope you do too!
Ingredients
1 large stock of broccoli
1 large carrot
4 mushrooms
1/4 medium red onion
2 handfuls of grape or cherrie tomatoes
2 handfuls of pine nuts (may substitute avocado chunks)
-your choice of any other raw vegetables, kalamata olives, and so forth
1 dash of virgin olive oil
1 dash of apple cider vinegar
1 dash of coconut aminos (like a soy sauce)

Instructions
Using the S-blade and our food processor, chop veggies to desired consistency and place into mixing bowl and stir them up together well. Then add pine nuts, olive oil, vinegar, Mrs. Dash, and the coconut aminos to taste and stir it in well by hand. Depending upon the amount of fat you want in this dish, you could add avocado and olives for even more taste, or you could do some substituting by leaving out the nuts and then add your choices of other healthful fats. If I would have had fresh sweet peas to add to this salad, it would have taken it way over the tope.
This salad can also be created with just a knife and a cutting board, but two thumbs up for having a food processor to make this salad. It came together very swiftly and is a very enjoyable way to eat more green vegetables. Add a slice of watermelon or cantaloupe on the side and you will truly enjoy this dish.

I was looking for new salad, this looks yummy! But what are coconut aminos and where do you get them, I have never heard of that before. Also, would you consider teaching a class, doing a video or just blogging on how to use fresh garden herbs? What kind of dishes to use the different herbs in? I am not a natural cook, and do not know how to use herbs and spices very well. I am always guessing and hoping (with a 50/50 chance) of whatever I am making tasting really good instead of just edible.
Hi Janice, coconut aminos, Braggs Liquid Aminos, and Tamari Sauce all taste close to the same and can be purchased in most health-food stores or asian markets. Even regular grocery stores often carry them. They are different versions of a traditional soy sauce, except the one made from coconut is not made of soybean:)

We tried this tonight and it was good. I need to learn how to use my food processor though so the pieces come out a little bit bigger, it kind of turned into a "slaw!" Bigger pieces would have made it a little more fun I think. Also I changed up the ingredients, working with what I had and made more salad so I should have added more of the seasonings....live and learn! I will make this again with just a few changes! Both my husband and daughter ate it! Thanks for the idea! :0)
