His and Her's Homemade Soup!
Colleen had been up since 4:00 a.m., was hungry and was fading fast. I looked in the refrigerator and found the following:
ingredients
1/4 head of cabbage
1/4 head of cauliflower
2 not so very big carrots
3 scallions, chopped
2 large handfuls spinach, chopped
2 organic eggs from farmer Bob's
1 cup, pre-cooked beans
2 cups homemade Chicken Stock
1 tomato, diced
Instructions: Grate carrot, cauliflower, and cabbage; then add along with chicken broth and scallions to soup pot. Bring to boil and reduce to simmer. Then prepare 2 eggs, scrambled fashion, and stir into soup. Then add beans to soup. When veggies are done, add spinach and tomato and then serve!
Colleen was refreshed from her hunger and slept like a baby! The secret to healthful, homemade five-minute soups is to keep on hand healthful and defatted homemade chicken, beef, and vegetable stocks on hand, plus a variety of pre-soaked and cooked beans. Both stocks and beans are easy to prepare and make all the difference in the time it takes to feed a hungry soul with food that nurtures.
