Fruited Rice Salad

This is a simple, nutritious, and delicious addition to our satiating salad lineups! It can be made with any well-ripened fruit(s) of choice. The idea behind the salad is to include a non-gluten grain such as quinoa or in this case brown rice, along with fruit, leafy greens, celery, pine nuts, and a little sweetened coconut milk as a sauce that is mixed into the rice (optional). In some ways, this is a "green smoothie" but much better for the physiology or natural makeup of the body, which does best when whole foods are chewed and absorbed at a rate nature intended.

Ingredients
3 cups cooked brown rice
2 large handfuls of baby spinach (chop well)
1 rib dice celery
a few cups+ (to preference) of ripened fruit of choice
1 good handful of pine nuts
Coconut sauce (1/2 cup coconut milk + shake of Mrs. Dash + 1 Tbsp maple syrup)

Instructions

Mix sauce and rice well, then mix in all other ingredients well. This will feed three people as is, or for two people you can reduce the amount of rice to two cups. Enjoy!
