Spinach Tomato Bisque Soup

This Spinach Tomato Bisque Soupis delightful and satisfying. A bowl of this soup and a tray of raw veggies will not only hold you over until dinner, but will give you tremendous nutritional bang for the caloric buck! 

Ingredients:

Two 28 oz cans of whole tomatoes, blended to slightly chunky state
One 19 oz can coconut milk
1 small to medium onion, diced

2 carrots, diced
2 ribs celery, diced

1 tsp Italian Seasoning (McCormick Tuscan Style)
Generous amount of chopped spinach
1 +tsp Maple syrup (to remove acid flavor from tomato, if needed)
avocado chunks or cilantro, as a garnish!
 
 
Instructions:
Cook onion, celery, carrots and seasonings in 1/2 cup coconut milk until onions are soft and translucent; then add blended tomatoes and remaining coconut milk and simmer for another 30 minutes or so. Add spinach for one minute or so and then sweetener to taste just before serving. This soup is wonderful as a standalone or over steamed veggie, or even over rice, beans, or a whole-grain pasta. We even enjoy it as a salad dressing!

Can you use rice milk instead?
One more thing. I dont like chunks in my tomato soup. It looks like it is smooth? Is it, did you blend everything? Could you blend everything?

You can omit the coconut milk, or blend mature white coconut and juice into this soup, or use rice milk. There are a variety of ways we've made it. The coconut milk does add anti-bacterial, fungal, and viral strength to the dish, making it a nice wintertime soup. Given that one small bowl pretty much fills a person for hours, I'm not overly concerned about the high fat content of coconut milk. Close to 60% of the fat in coconut milk is Lauric acid and its properties are very unique and helpful when it is not over-consumed. Best!

As for the chunks, some like it chunky and some smooth. Dice veggies to desired consistency, or simply blend them into the soup. The combination of onion, carrot, and celery enables a nice flavor. If you are in a hurry you may leave them out and you will still obtain a good flavor.
