This satiating Thai salad has been one of the most popular dishes we've served over the years and gets high praise from 100s of class participants in every setting it has been served. If you haven't yet mastered this simple and delightful salad, take time to do so now. Enjoy its blend of texture and oriental flair. The peanut sauce is easy to whip up in a blender and provides an authentic Asian flair to the meal. It is complimented very nicely by our Butternut Soup recipe. Enjoy!

 

 

Oriental Salad

Salad Ingredients:

1.5 cups shredded carrots

1 medium zucchini, cut into thin matchsticks

1.5 cups mung bean sprouts

3 cups Napa cabbage, finely chopped

1.2 cup cilantro, chopped

1 bunch green onions, chopped

1/4 cup sesame seeds

1/2 lb whole-grain spaghetti

 

Peanut Dressing Ingredients:

1 Tbsp fresh garlic, minced

1 inch fresh ginger

1/4 cup water

1/3 cup natural peanut butter

1/3 cup honey

1/4 tsp red pepper flakes

1/4 cup Braggs Liquid Aminos

2 Tbsp rice vinegar

1 tsp chili garlic sauce

 

Instructions: Combine salad ingredients into a large bowl. Combine dressing ingredients into a blender. Blend until smooth and toasty warm. Combine peanut dressing with salad, toss well and serve.

I made this last weekend and the dressing is fabulous! I am all about bold flavor and this does it for me. The amount of garlic was way too pungent for me so I cut it down to one teaspoon.  That was perfect for me and it has been my dressing of choice for my green salads all week. I'm going to have to find another dressing to interchange with because I can't be eating this much peanut butter all the time. Thank you for a wonderful recipe and thank you for all the time and effort put into this website and sharing your knowlege with so many who need it. Although I've read the book I find myself taking it with me everywhere I go. I love rereading everything and figuring out what recipe I'm going to make next.
