Roasted or Raw Beet Salad
1 or 2 large handfuls of field greens
1 small handful of sunflower sprouts
1 small red onion, diced
1 apple, sliced
1 grated raw beet or cubed roasted beat
1 handful soaked almonds, chopped
Instructions: Add field greens to large mixing bowl; then add sunflower sprouts, onion, apple, beet, and almonds. Then top with any vinaigrette dressing of choice. May also top salad with quinoa.
