Sample Daily Meal Plan - 1
Breakfast
Delightful Oatmeal Breakfast (3 servings)
1 cup dry oatmeal
3 cups water
2 Tbsp chia seed
1 apple, diced
3 Tbsp raisins
1 tsp cinnamon
1 tsp honey per bowl (optional)
Berries or banana to top dish
Bring water to boil; then add oatmeal, chia seed, raisins, and cinnamon to pot. Reduce heat to a simmer for five minutes with lid on pot. Remove from heat and place oatmeal dish in three breakfast cereal bowls. Stir in dices of apple and 1 tsp honey into each bowl. Mix well and top with other fruit such as banana or berries of choice.
Lunch
Cruciferous Salad Mix (3 Servings)
2 large Kale leafs, stemmed, massaged, and torn into bite-sized pieces
2 large handfuls of Chicory, torn into bite-sized pieces
2 cups peeled and grated broccoli stems
2 cups chopped cabbage
1 cup sliced-thin Brussels Sprouts
1 apple, diced
1 handful Pumpkin Seeds
1 handful Crasins
Combine ingredients well in bowl. Coat with dressing of choice (see below) and toss well.
Berry Vinaigrette - Dressing Option 1
1.5 cups organic or fresh apple or orange juice
5 Tbsp apple cider vinegar
5 Tbsp chia seed
-maple syrup or raw honey to taste (app. 1/2 cup)
3 to 4 cups triple berries or other berries of choice
Blend ingredients and enjoy over salad.
Orange Ginger - Dressing Option 2
1 peeled orange
2 Tbsp lemon juice or apple cider vinegar
1+ inch ginger root, pressed (use juice and pulp)
1+ Tbsp Tamari Sauce, to taste
1 Tbsp chia seed
1 pinch red peper flakes
1/2 cup water
1 pinch stevia powder or maple syrup, to taste
Blend ingredients and enjoy over salad.
Dinner
Raw Veggie Tray with Favorite Party Dip
Fill a tray with a variety of raw veggies (carrots, broccoli, cauliflower, cucumbers, celery, jicama, sweet potato slices, zucchini slices, sweet pepper slices, etc.) Eat raw veggies plain or dipped in the Favorite Party Dip (see Favorite Party Dip below)
Favorite Party Dip
1 14.5 oz can of garbanzo beans, drained and rinsed
1 cup sun-dried tomatoes, cut into small pieces
1 to 2 cups almond, soy, or goat milk
2 Tbsp Johnny's Garlic Spread
1.5 Tbsp Italian Herbal Seasoning
1 cup finely grated Grana Padano cheese (optional)
10 to 15 kalamata olives, sliced (optional)
2 Tbsp Chia Seed
Blend all ingredients except olives, sun-dried tomatoes, and chia seed until smooth. Then stir remaining ingredients in by hand and allow dip to sit 10 to 15 minutes before use.
Tortilla Soup
1 10-oz can Enchilada sauce
1 4-oz can can chopped green chilis
1 cup water
1 small bottle salsa
1.5 tsp each: cumin and chili powder
1 28-oz can tomatoes, blended slightly
1 onion, chopped
2 cloves garlic, minced
1 quart vegetable broth
4 15-oz cans cooked beans, drained and rinsed (kidney, black, great northerns, and pinto)
1 cup coconut milk
Combine all ingredients in post. Bring to boil and then reduce to simmer for 20 minutes, or until onions are tender. It is then ready to serve. Place in serving bowls and garnish with avocado, fresh-diced tomatoes, and fresh cilantro.
Deliciously Dessert (6 servings)
Mango Chia Pudding over Strawberries and Bananas
5 Mangos; peeled, pitted, and pureed
2 pounds Strawberries, washed and sliced
2 ripe bananas, sliced
2 cups almond milk
1 cap vanilla
4 Tbsp chia seed
Maple syrup to taste (optional, depending upon ripeness of mangoes)
Peel and seed Mangos. Place Mango fruit and vanilla into blender with 2 cups almond milk and blend until smooth. Then turn blender to low and add seed at a speed that folds the seed into the mango blend evenly. Add sliced strawberries and bananas to individual serving cups and pour the Mango Sauce over the strawberries and bananas until it engulfs the fruit. Refrigerate until ready to serve.
Notes: Breakfast, lunch, and dinner feature a high-protein seed that helps to compliment each meal. One ounce of chia seeds (2 tablespoons) contains 9 grams of fat, 5 milligrams of sodium, 11 grams of dietary fiber, 4 grams of protein, 18% of the recommended daily intake of calcium, 27% phosphorus, and 30% manganese. It is also high in iron and is a great seed to use to compliment almost any dish. It can be added to fresh juices, smoothies, dressings, sauces, stews, and desserts and snacks of many varieties. Give this meal plan a try.
