Taco Soup Recipe
1 10-oz can enchilada sauce
1 4-oz can chopped green chiles
4 cups Chicken soup stock
1 small 8-oz bottle of salsa
1.5 tsp each: cumin and chili powder
10 oz frozen corn
2 15-oz can crushed tomatoes
1 onion, chopped
2 cloves garlic, crushed
2 or 3 15-oz cans kidney or other beans, drained and rinsed
10 oz coconut milk
1 cup quinoa (soak for 30 minutes, drain and rinse)
Instructions: Combine all ingredients in pan and cook until onion and quinoa are tender. You can also add a little chicken-breast chunks to the mix if you are not vegan and garnish with cheese. It's satisfying with or without the animal-based products. If you have mixed company, you can place any animal-based foods in a bowl that can be added by those who want to use it:)

I'll share something about quinoa. I use half quinoa and half ground beef in our tacos because quinoa has such a similar texture and mouth feel. When I have guests who don't eat meat, I make tacos with just quinoa and they put that in their tortilla.
