Ingredients:
4 cups water or broth, as desired
1 large onion, diced
2 medium yellow summer squash
1/4 head cabbage, chopped
1 large potato, cubed
3 large carrots, sliced
1 lb broccoli, chopped
Medjool dates, to desired sweetness
2 to3 tsp curry, to taste
1 can coconut milk, to desired richness
2 cans of navy beans
Favorite bouillon, to taste

To comment on tapiocca, its best to go to that video and comment. This is the Curry Veggie Medley recipe; as you review the dietary recommendations found in Daniel's Challenge, you will see that starches (beans, grains, and starchy vegetables) are used to meet caloric needs not met by eating fruits and vegetables freely. During weight-loss, limit starches to one cup per day.

I like how all the stuff is blended in the sauce. I would not have thought of doing it but it looks like it makes a very nice texture! It adds so many nutrients! Also I think adding the coconut milk will be essential for the yummy flavor. As a person the had a weight problem for a long time and was afriad of fat. I found that fat from coconut and other healthy fats actually help me maintain a healthy weight and doesn't make me fat! ;) Of course I'm sure you could overdo but I found that healthy fats was a important key to my weight LOSS.

Can't wait to try this recipe I assume it is in your book?

Curry Veggie Medley is on page 126 of Original Fast Foods; in the video and in real life we've altered the amount of water we now use in the recipe to just 1 cup instead of 4 cups. We've taught this recipe in many classes, along with other foods. When it's time to eat, it always seems to be the first to go. Thanks for your comments!

Oh she mentions that if you have a high powered blender you don't need to precook the veggies! Sorry missed that before. Could you use curry powder instead of paste? If so how much? OR where do you get curry paste? thanks so much! I am really enjoying your book!

You can use curry powder; we prefer the paste and buy it from Asian markets where you can get a very large container for just a few dollars.

I cannot seem to find this recipe in my copy of the book (the cover has 2 children on front).  Page 126 in my copy is in Chapter 10 with Guiding Health Principles.  I've located the recipe for Curry Stew, it seemed drastically different from the video.  Perhaps I have an older copy?  I would love to make this recipe.

Erin, I have included the ingredients just below the video now, so that it is accessible to you and others that do not have it. The recipe is found in custom daily meal plan 5 on page 126 of the second edition of Original Fast Foods. The first edition did not include the meal plans. Best!
