I loved this demonstration. It will help when I am ready to try naturally leavened bread again. My first try was a disaster.

Very thorough! Once I get back to my home in UT, where my wheat grinder and mixer are, I'll be giving this one a try.

What kind of mixer do you use? Also, what is the cutter you use for the dough?

Are there any directions for making this bread without a machine?

I have a very active starter that I have kept going for over 20 years and was given to me by a friend who's family have kept going for about 70 years, but it was made with white flour, do you think that I could use this starter to begin a wholewheat starter or do you use white flour for this?
