We've taught a lot of food-prep classes; this salad is always a class favorite. The peanut dressing adds a completely authentic Asian flair.

Oriental Salad
Salad Ingredients:
1.5 cups shredded carrots
1 medium zucchini, cut into thin matchsticks
1.5 cups mung bean sprouts
3 cups Napa cabbage, finely chopped
1.2 cup cilantro, chopped
1 bunch green onions, chopped
1/4 cup sesame seeds
1/2 lb whole-grain spaghetti

Thai Peanut Dressing Ingredients:
1 Tbsp fresh garlic, minced
1 inch fresh ginger
1/4 cup water
1/3 cup natural peanut butter
1/3 cup honey
1/4 tsp red pepper flakes
1/4 cup Braggs Liquid Aminos
2 Tbsp rice vinegar
1 tsp chili garlic sauce

Instructions: Combine salad ingredients into a large bowl. Combine dressing ingredients into a blender. Blend until smooth and toasty warm. Combine peanut dressing with salad, toss well and serve.

I'd like the recipe for the peanut dressing for the oriental salad. The video didn't give any measurements.

how much water, braggs, vinegar, red pepper and etc? Is this recipe in your 1st edition of Original Fast Foods?

Has anyone else tried this with authentic Asian rice noodles? It's really good! The recipe is in Original Fast Foods.

I have the 2nd edition of OFF and have looked hard for this recipe. Although there is a recipe that looks similar, the proportions seem different, and the dressing is cooked, not blended. Could you please post where in the book this recipe can be found? Or is this a new variation of the one I found? The one I found doesn't have nearly so much napa cabbage in it.

I second everyone's request for this recipe.  I bought all the ingredients and then found there was no recipe in my Origianl Fast Foods book.

I'm sorry I have not seen these requests sooner; the recipe is on page 126 of Original Fast Foods; also it is HERE on the website. The link in Living Young, volume 7 takes you to the recipe as well. Enjoy!
