Try this Mediterranean Black Bean Dip that I came up with today:
1 1/2 cup cooked black beans, drained 1 - 2 cup(s) water 10 kalamata olives, with 2 tbsp vinegar 1 clove garlic, or 1/2 tsp garlic powder 1/4 cup almonds 1/4 tsp salt 3 tbsp Chia Seed
Mix all in a vita-mix, except the chia seed, until smooth. Add the chia seed and mix lightly. Pour into a container and wait 30 minutes to serve. The dip will thicken as the chia seed absorbs the liquid.

I used the vinegar in the bottle of Kalamata olives from Costco.
Thank you for posting this fun idea. Can hardly wait to try this one Julie; what type of vinegar are you using? Jim
