Waldorf Rice Salad

Salad Ingredients: 1. 2 grated carrots 2. 2 grated apples 3. 1/4 cup raisins 4. 1/4 cup walnuts 5. 1 can crushed pineapple 6. 2 cups chopped celery 7. 1 or 2 cups cooked rice 8. Bed of leafy greens Dressing Ingredients: 1. 2 cups fresh apple juice 2. juice of one lemon 3. juice of 1" of fresh ginger root 4. pinch of cinamon and nutmeg 5. Ultra Gel Instructions: combine salad ingredients in a bowl, except the leafy greens; mix well and coat with dressing and serve over leafy greens. To make the dressing, combine the apple, lemon, and ginger-root juice with the cinamon and nutmeg and wirewhip in ultragel to desired consitency. Pour over salad mix. Toss to coat and serve salad mix over bed of leafy greens. This is so good!

  • Thank you for the recipe!! Because I am diabetic and very allergic to nuts I used only 1/3 cup brown rice and increased my leafy bed of greens, I made up only s dmsll smount of the dressing. It was very delicious! I was wondering if The rice mixture would keep during the week, without the greens, of course, so that I could have a ready made meal when I don't have time to cook? What do you think--anyone!
  • If you local grocer does not carry Ultra Gel, you can order it directly from the manufacturer at http://www.carnetfoods.com/. We like it because it thickens any liquid at any temperature. It's great for making jams, dressings, sauces, gravy, and so forth.
  • Where can you get Ultra Gel? I have never heard of it. I live in PA.
