Anytime you can add veggies to a grain dish you will significantly increase the satiation of the meal and the nutrient content. Our slender Asian friends enjoy mixed grains and vegetables for breakfast, lunch, and dinner, which can be rice and veggies, noodles and veggies, or any other grain and veggies. This low-calorie, heart healthy breakfast is incredibly nutritious, tasty, and satisfying.

Ingredients:

  • 1 cup dry oatmeal
  • 2 cups water
  • 1 to 2 cups finely chopped broccoli
  • 1 medium to large carrot (grated)
  • 1 grated apple
  • Braggs Liquid Aminos or Soy Sauce

Instructions: As you bring two cups of water to a boil, chop broccoli and grate carrots and measure out one cup of dry oatmeal. Add the veggies and oatmeal to the boiling water and cook until water is absorbed and the veggies are tender. Add grated carrot to the dish along with a squirt of Braggs Liquid Aminos. Stir well and enjoy!

Colleen threw this together for me while I was reading this morning and it was so simple and enjoyable we just had to share it with you. We could have added so many variations to it, such as some chopped spinach or other leafy green, or even some scrambled egg if you want to add some animal-based food option. Try it and enjoy!
Ummm! This sounds good, will try it.  Just a comment from an ex-teacher--through is to go 'through' something, but putting together here is 'threw', though I don't think she would 'throw' it at you! ;-)

I have a favorite "raw" breakfast that is similar to this.  I finely chop, in a food processor, 3-4 celery stalks, 1-2 carrots (depending on size) and one apple.  I add this to 1/2 cup of oats that have been mixed with 1/2 tsp. cinnamon and 1 Tbsp. chia seeds.  Pour almond milk on top.  Mix well, and let sit while you clean up the equipment, then enjoy.  It's heavenly!!
