The pancake recipe on p. 122 of the OFF book calls for whole wheat flour. I grind my own wheat and would like to know which wheat to use. Would you be able to tell me which flour I'd have the most success with . . . hard red, hard white or soft white?
Would I also be able to make this in advance as mentioned on p. 120?
