Simple Honey Chicken
This is such an easy way to create the perfect chicken for your enchiladas or for a salad topping. When added to burritos or enchiladas that are loaded with rice and beans it makes the perfect sparing compliment of meat.
Ingredients
1 or 2 Chicken breasts
1.5+ Tbsp coconut oil
- whole-wheat flour
1+ Tbsp Maple syrup
1 Pinch of salt
Instructions: Add coconut oil to the bottom of stir-fry pan. Cut chicken into small pieces and dip in flour until coated. Our family of six that are home now only needs 2 chicken breasts for this entire meal. Heat pan and add chicken. Cook swiftly on both sides, then add sweetener to taste, plus a pinch of salt to enrich the sweetness. After browning on both sides, flip chicken until it is cooked and don't overcook. If you do this right, the chicken will be extremely moist.
Next, add chicken inside your burrito or enchilada along with rice, beans, tomatoes, lettuce, and so forth. Then top enchilada with the white sauce and a sprinkle of cheese, bake until cheese melts in toaster oven, and garnish as desired (avocado, cilantro, salsa, etc.). Ummm!
