Raw Veggie Platter and Pulse Dip

Monday we went to our neighbor's home to enjoy an evening with the children watching an awesome movie on an even more awesome screen the size of a wall, which was supported by surround sound and awesome food. Colleen and I brought over the popcorn and a veggie tray with Mediterranean Pulse Dip (see picture above). Pulse is made from a combination of legumes (beans), grain, nuts, and seeds. It is what Daniel ate as his main caloric source that he enjoyed with raw fruits and veggies. We have invented many wonderful pulse dips and will share one with you below that we enjoyed the other evening. The consistency can be from runny to thick, whatever suits your purposes best, based upon how much date water you choose to add to the mixture. The picture above is a picture of a veggie tray Colleen surprised me with the day following the party. What a great way to enjoy raw vegetables!
 

Veggie Ingredients
2+ pounds raw veggies of choice, cut up or sliced the way you prefer. Then enjoy these veggies plain or dipped in a pulse dip. See example of a pulse dip below.
 

Mediterranean Pulse Dip

Ingredients
2 cups cooked beans
1 cup cooked quinoa
1 cup sun-dried tomatoes, rinsed
2 cups date water 
1/2 cup pine nuts
2 Tbsp chia seed
1.5 Tbsp Johnny's garlic seasoning
1.5 Tbsp Italian Seasoning
1/2 cup Grano Padono cheese

 

Instructions

Combine everything except the pine nuts, chia seed, quinoa, and sun-dried tomatoes in a blender until smooth. Then turn blender to low and add sun-dried tomatoes and chia seed to the mixture and gently mix them in with the blender without pulverizing the seed or sun-dried tomatoes. Then pour contents into bowl and gently stir into the mixture the pine nuts and quinoa. If too thick for your liking add a bit more date water. Enjoy!

With the chia seed I was wondering why it was not sprouted. Isn't this more healthy? I have never tried it without sprouting it. Perhaps I could leave it out. That is a beautiful display of veggies! Thanks for the help. I have a son who wants to be a vegetarian. I always welcome new ideas! Thanks.

Francis, chia seed offer wonderful health properties sprouted or simply soaked. When added to this mix the chia seed absorb a lot of liquid and become softened and welcomed nutritious additions to the mix. Jim

How long will the date water keep in the fridge?

If you can't afford the pine nuts to you have a suggestion of what else to use. Also can you substitute the Padono cheese for any other kind?

Hi Cindee, You can leave out the nuts entirely, or add almonds, walnuts or some other nut or seeds to your preference (chopped to easily edible pieces). Jim

I am trying to avoid msg, which I believe is in Johnny's Garlic Seasoning.  Do you have any recommendations for a substitute?  Thanks

Omit Johnny's Garlic Seasoning and add straight garlic powder or even minced fresh garlic to taste!
