I have had my starter for 2 months or more. I feed it, and have made pancakes, flatbread and loaves. The problem I have is getting the loaves to rise enough. They rise enough to not have a solid brick, but they won't rise above the pan. I have tried using more starter in the dough, stored it in the frig overnight then let it rise the next morning. It gets just above the pan, then when I put it in the hot oven they shrink to below the top of the pan. The taste is good. I have watched the videos and those loaves look big and beautiful. Do I have a bad batch of starter? Is there anything I can do to perk it up?
