Ingredients:
4 cups cooked black beans
2 cups cooked brown or white rice
2 cups chopped tomato
1/2 cup each: chopped green onions and celery
Lime Dressing Ingredients:
1 tsp minced garlic
1 Tbsp raw cashews
1/4 cup cilantro, chopped fine
1/4 cup lime juice
1/4 tsp. miso
2 shakes hot pepper sauce, to taste
Blend all dressing ingredients well together and use to dress Mexi-Bean Salad.
