We've taught a lot of food-prep classes; this salad is always a class favorite. The peanut dressing adds a completely authentic Asian flair.
Oriental Salad
Salad Ingredients:
1.5 cups shredded carrots
1 medium zucchini, cut into thin matchsticks
1.5 cups mung bean sprouts
3 cups Napa cabbage, finely chopped
1.2 cup cilantro, chopped
1 bunch green onions, chopped
1/4 cup sesame seeds
1/2 lb whole-grain spaghetti
Thai Peanut Dressing Ingredients:
1 Tbsp fresh garlic, minced
1 inch fresh ginger
1/4 cup water
1/3 cup natural peanut butter
1/3 cup honey
1/4 tsp red pepper flakes
1/4 cup Braggs Liquid Aminos
2 Tbsp rice vinegar
1 tsp chili garlic sauce
Instructions: Combine salad ingredients into a large bowl. Combine dressing ingredients into a blender. Blend until smooth and toasty warm. Combine peanut dressing with salad, toss well and serve.

I have the 2nd edition of OFF and have looked hard for this recipe. Although there is a recipe that looks similar, the proportions seem different, and the dressing is cooked, not blended. Could you please post where in the book this recipe can be found? Or is this a new variation of the one I found? The one I found doesn't have nearly so much napa cabbage in it.
