I was able to speak with Colleen, and because I was using "just milled" warm WW flour, she said I had too many warm things.  If I used warm flour, I needed to use cold water when adding to the flour in the bowl.  I am also trying to have my starter ready to use from the refrigerator, and not make it room temperature before I use it.  Apparently this can take several feedings for our "lacto" friends to not go dormant.  My starter is still not there yet, so I haven't made any bread yet, just a lot of waffles & pancakes with the refrigerator starter.  I think the next time I make bread, I will mill my flour in the morning so it is at room temperature, use warm water, & active refrigerator starter.  I just don't need anymore bricks!  When I'm successful, I'll post it!  It might be a few weeks though.
